Breakfast Chef (Lodge) – Experienced

Want to grow as a chef? This conference centre kitchen in Fourways gives you real stations and real volume. If you turn up on time and finish what you start, you'll fit in quickly.

Location: Fourways, Gauteng. Applicants who already live in the area get looked at first. Start date: as soon as possible for the right person.

• Clean down your section, deep-clean the fryer and scrub the extractor filters.
• Bake breads, pastries or desserts for the morning buffet.
• Cook steaks, burgers and grills to the temperature on the docket.
• Receive deliveries, check weights and reject short-dated produce.
• Cook for banquets and conference lunches of 100 to 400 guests.
• Train the kitchen assistants on knife safety and prep standards.

• Good knife skills and you can prep at speed
• 1 to 3 years in a busy commercial kitchen
• Weekend, holiday and evening work is part of the deal
• A culinary certificate or City & Guilds, or solid on-the-job experience
• Comfortable in heat, on your feet, for long split shifts
• You know food safety basics under R638 and HACCP

• Experience with combi ovens and batch cooking
• Halaal or kosher kitchen experience
• Stock and ordering experience on a system such as Micros or Pilot

• Transport allowance for split and late shifts
• Two staff meals per shift
• Live-in accommodation at lodge postings

• List your stations (grill, pastry, cold, sauce) under each job; head chefs scan for this first.
• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
