Commis Chef (Hotel Kitchen) – Fixed-Term

Service is busy at this hospital catering unit in Randburg, so steady hands and a tidy station matter here. Someone who likes a bit of variety, but also likes doing things the right way, will enjoy this.

You'll report in Randburg. Relocation is not covered for this one. The first two weeks are spent shadowing someone experienced.

• Cook steaks, burgers and grills to the temperature on the docket.
• Label, date and rotate stock using first-in, first-out.
• Run your station during service and call back every ticket from the pass.
• Help cost recipes and track waste on the weekly sheet.
• Cook for banquets and conference lunches of 100 to 400 guests.
• Clean down your section, deep-clean the fryer and scrub the extractor filters.

• Comfortable in heat, on your feet, for long split shifts
• 1 to 3 years in a busy commercial kitchen
• Good knife skills and you can prep at speed
• Weekend, holiday and evening work is part of the deal
• A culinary certificate or City & Guilds, or solid on-the-job experience

• A food safety certificate from a registered training provider
• Pastry or bakery training
• Halaal or kosher kitchen experience

• Transport allowance for split and late shifts
• Two staff meals per shift
• Chef whites and safety shoes provided
• Live-in accommodation at lodge postings

• Do not leave gaps unexplained; if you did casual banquet work between jobs, say so on your CV.
• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
