Kitchen Assistant (Prep & Scullery)

You'll cook fast, clean food on the line at a conference centre kitchen in Khayelitsha. It's the kind of job where doing the basics well every day gets you noticed.

The work is in Khayelitsha, Western Cape, so you'll need a reliable way to get there every day. Start is planned for the beginning of next month.

• Bake breads, pastries or desserts for the morning buffet.
• Label, date and rotate stock using first-in, first-out.
• Log fridge and freezer temperatures twice a shift on the HACCP sheet.
• Plate to the spec photo so every dish looks the same.
• Train the kitchen assistants on knife safety and prep standards.
• Prep veg, sauces, marinades and portions from the daily mise en place list.

• Comfortable in heat, on your feet, for long split shifts
• 1 to 3 years in a busy commercial kitchen
• You know food safety basics under R638 and HACCP
• Weekend, holiday and evening work is part of the deal
• A culinary certificate or City & Guilds, or solid on-the-job experience
• Good knife skills and you can prep at speed

• Pastry or bakery training
• Experience with combi ovens and batch cooking
• Halaal or kosher kitchen experience

• Transport allowance for split and late shifts
• Two staff meals per shift
• Live-in accommodation at lodge postings

• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
• List your stations (grill, pastry, cold, sauce) under each job; head chefs scan for this first.
