Job Description

Behind every good plate at this conference centre kitchen in Secunda is a cook who preps properly, and that could be you. This is a good step for someone who wants proper routine and a manager who notices good work.

Home base is a conference centre kitchen on the Secunda side of Mpumalanga. Hours are mostly Monday to Friday, with the odd Saturday in busy months.

The work, day to day

Prep veg, sauces, marinades and portions from the daily mise en place list.
Log fridge and freezer temperatures twice a shift on the HACCP sheet.
Help cost recipes and track waste on the weekly sheet.
Plate to the spec photo so every dish looks the same.
Bake breads, pastries or desserts for the morning buffet.

You'll need

A culinary certificate or City & Guilds, or solid on-the-job experience
Good knife skills and you can prep at speed
Comfortable in heat, on your feet, for long split shifts
You know food safety basics under R638 and HACCP

Helpful, not essential

Experience with combi ovens and batch cooking
Halaal or kosher kitchen experience
Stock and ordering experience on a system such as Micros or Pilot
