Chef de Partie (Pastry)

Want to grow as a chef? This safari lodge kitchen in Mbombela gives you real stations and real volume. Bring a calm head on busy days and you'll be fine.

Location: Mbombela, Mpumalanga. Applicants who already live in the area get looked at first. Weekend work is on a roster, so you won't be on every weekend.

• Bake breads, pastries or desserts for the morning buffet.
• Help cost recipes and track waste on the weekly sheet.
• Run your station during service and call back every ticket from the pass.
• Train the kitchen assistants on knife safety and prep standards.
• Receive deliveries, check weights and reject short-dated produce.
• Cook for banquets and conference lunches of 100 to 400 guests.

• Weekend, holiday and evening work is part of the deal
• Comfortable in heat, on your feet, for long split shifts
• You know food safety basics under R638 and HACCP
• A culinary certificate or City & Guilds, or solid on-the-job experience
• You take instruction from the head chef without drama

• Halaal or kosher kitchen experience
• Experience with combi ovens and batch cooking

• Live-in accommodation at lodge postings
• Two staff meals per shift
• On-the-job training with a path to chef de partie
• Chef whites and safety shoes provided

• Do not leave gaps unexplained; if you did casual banquet work between jobs, say so on your CV.
• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
