Behind every good plate at this wood-fired pizzeria in Umlazi is a cook who preps properly, and that could be you. It's a practical job: you'll see what you got done before you go home.

The site is in Umlazi; early starts mean public transport timing matters, so check your route before applying. Shifts rotate, so you'll need to be flexible about days and nights.

• Receive deliveries, check weights and reject short-dated produce.
• Cook for banquets and conference lunches of 100 to 400 guests.
• Run your station during service and call back every ticket from the pass.
• Train the kitchen assistants on knife safety and prep standards.
• Prep veg, sauces, marinades and portions from the daily mise en place list.

• Comfortable in heat, on your feet, for long split shifts
• Good knife skills and you can prep at speed
• You know food safety basics under R638 and HACCP
• 1 to 3 years in a busy commercial kitchen
• Weekend, holiday and evening work is part of the deal

• Experience with combi ovens and batch cooking
• Pastry or bakery training

• Live-in accommodation at lodge postings
• Transport allowance for split and late shifts
• Chef whites and safety shoes provided

• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
