Kitchen Assistant (Prep & Scullery) – Permanent

Service is busy at this hospital catering unit in Bethlehem, so steady hands and a tidy station matter here. Good for someone who wants to build a solid track record they can put on their CV.

Location: Bethlehem, Free State. Applicants who already live in the area get looked at first.

• Receive deliveries, check weights and reject short-dated produce.
• Cook for banquets and conference lunches of 100 to 400 guests.
• Label, date and rotate stock using first-in, first-out.
• Plate to the spec photo so every dish looks the same.
• Prep veg, sauces, marinades and portions from the daily mise en place list.
• Log fridge and freezer temperatures twice a shift on the HACCP sheet.

• A culinary certificate or City & Guilds, or solid on-the-job experience
• You know food safety basics under R638 and HACCP
• 1 to 3 years in a busy commercial kitchen
• Comfortable in heat, on your feet, for long split shifts
• Weekend, holiday and evening work is part of the deal

• Stock and ordering experience on a system such as Micros or Pilot
• A food safety certificate from a registered training provider
• Experience with combi ovens and batch cooking

• Transport allowance for split and late shifts
• Chef whites and safety shoes provided
• Live-in accommodation at lodge postings
• On-the-job training with a path to chef de partie
