Line Cook (Grill Station)

You'll cook fast, clean food on the line at a hospital catering unit in Durban Central. This role rewards consistency more than flash.

This post is Durban Central-based, with most of your time spent at a hospital catering unit. Hours are mostly Monday to Friday, with the odd Saturday in busy months.

• Train the kitchen assistants on knife safety and prep standards.
• Help cost recipes and track waste on the weekly sheet.
• Receive deliveries, check weights and reject short-dated produce.
• Prep veg, sauces, marinades and portions from the daily mise en place list.
• Cook steaks, burgers and grills to the temperature on the docket.
• Bake breads, pastries or desserts for the morning buffet.

• You know food safety basics under R638 and HACCP
• Good knife skills and you can prep at speed
• Comfortable in heat, on your feet, for long split shifts
• A culinary certificate or City & Guilds, or solid on-the-job experience
• You take instruction from the head chef without drama

• Live-in accommodation at lodge postings

• List your stations (grill, pastry, cold, sauce) under each job; head chefs scan for this first.
• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
