Pizza Chef (Wood-Fired Oven)

You'll cook fast, clean food on the line at a city hotel kitchen in Cape Town CBD. It suits someone who likes knowing exactly what a good day's work looks like.

Location: Cape Town CBD, Western Cape. Applicants who already live in the area get looked at first. Most weeks are 45 hours, in line with the BCEA.

• Plate to the spec photo so every dish looks the same.
• Help cost recipes and track waste on the weekly sheet.
• Cook for banquets and conference lunches of 100 to 400 guests.
• Cook steaks, burgers and grills to the temperature on the docket.
• Prep veg, sauces, marinades and portions from the daily mise en place list.
• Receive deliveries, check weights and reject short-dated produce.
• Log fridge and freezer temperatures twice a shift on the HACCP sheet.

• Good knife skills and you can prep at speed
• Comfortable in heat, on your feet, for long split shifts
• A culinary certificate or City & Guilds, or solid on-the-job experience
• Weekend, holiday and evening work is part of the deal
• 1 to 3 years in a busy commercial kitchen

• Experience with combi ovens and batch cooking
• Pastry or bakery training
• Halaal or kosher kitchen experience

• Live-in accommodation at lodge postings
• Transport allowance for split and late shifts
• Two staff meals per shift

• Do not leave gaps unexplained; if you did casual banquet work between jobs, say so on your CV.
• Expect a trade test: bring your own knives, arrive early and clean as you go the whole time.
