Sous Chef (Casual Dining) – Immediate Start

Service is busy at this safari lodge kitchen in Atlantis, so steady hands and a tidy station matter here. People who do well here are steady, honest and not scared to ask when something is unclear.

You'll be based at a safari lodge kitchen in Atlantis. Living nearby, or on a taxi route to it, really helps. Hours are mostly Monday to Friday, with the odd Saturday in busy months.

• Help cost recipes and track waste on the weekly sheet.
• Prep veg, sauces, marinades and portions from the daily mise en place list.
• Log fridge and freezer temperatures twice a shift on the HACCP sheet.
• Train the kitchen assistants on knife safety and prep standards.
• Cook steaks, burgers and grills to the temperature on the docket.

• Comfortable in heat, on your feet, for long split shifts
• You know food safety basics under R638 and HACCP
• Weekend, holiday and evening work is part of the deal
• Good knife skills and you can prep at speed

• Live-in accommodation at lodge postings
• On-the-job training with a path to chef de partie
• Two staff meals per shift

• List your stations (grill, pastry, cold, sauce) under each job; head chefs scan for this first.
• Do not leave gaps unexplained; if you did casual banquet work between jobs, say so on your CV.
